The CBM 2018 conference program will cover three themes: -
- the Art of Carbonating Beer as well as
- Taste Science behind Beer and Food Pairing
- Techniques in the craftbeer brewery lab

8:30-8:45 Welcome to Craftbeer Malmö 2018
8:45-10:10 Science of carbonation - Kurt Marshall
It’s about the basics of solubility of gases in liquids and aspects of mixed gas carbonation.
Kurt will also cover gas specifications and measures, bottle fermentation (Belgian
and German beers) and dynamic inline carbonation.

10:10-10:30 Short break
10:30-11:30 Sensory 101 - Nicole Garneau
Theory session about taste and the gustatory system. You will learn about how we
experience taste sensations. How basic tastes interact and what can/will affect our
senses when tasting something.

11:30-13:00 Lunch - with vendor exhibition
13:00-14:00 Techniques in the craftbeer brewery lab - Nan Albertson
Live on stage Nan will present lab procedures and techniques. The practical dos and
don’ts in the lab that we all should know about.

14:00-15:20 Practical methods for carbonation - Jamil Zainasheff
Jamil is back and will tell us about his experiences in carbonation. Pros and cons of
different carbonation methods as well as ideas for new methods. Walkthrough of different
carbonation stone types, calibration methods. CO2 concerns with kegging vs. bottling,
nitro beer, CO2 and pH level.

15:20-16:10 Break - with vendor exhibition
16:10-17:30 Practical taste experience - Nicole Garneau
You will be guided through a practical beer and food pairing session. Three types of
food and six types of beer is the plan. You will be introduced to the beer/food pairing
worksheet as well as the Beer Flavor Map (generously donated to attendees by

17:45-19:30+ “Bring your own beer” The tasting continues!
Time to network with other brewers, each brewery are free to bring their own beer for
this session. We have something special planned for this part as well. Your tastebuds
are in for a treat!
